If you have a garden, chances are good that you are harvesting zucchini right now. If not, zucchini are likely in season where you live and you are buying them (because we know it’s best to eat foods that are in season). Therefore, I thought I would list my zucchini recipes here in one place where they would be easy to find.

That’s a lot of zucchini love, Linda. 😉 Seriously, what a great resource this post it! 🙂 Inspired by your zucchini and sausage dish, I made a meatball, zucchini, and yellow squash dish for my support group on Monday. It turned out fabulous! I had originally planned to follow your recipe as it was, but found meatballs that I had deemed too sweet in the back of my freezer. Combined with the zucchini, yellow squash, onions, garlic, they made for a delicious, even compliment-worthy meal. Good thing I was shopping in my freezer to avoid going to the store. 😉 I do plan to make your recipe with the sausage in the future though.

Stephanie, I love zucchini too, and I’m disappointed that I’m having a very difficult time with my plants this year. There have been several problems, but squash bugs have been the worst.
Thank you for the great ideas. I just started my blog to keep track of successful recipes that I’ve used for the zucchini from my garden. Gluten free is definitely a challenge, and the recipes you listed look delicious. I can’t wait to try the Z & walnuts. I have a zucchini tofu recipe you may like, I’ll probably post that next week.
