Made with fresh strawberry puree and of course some chocolate, this paleo strawberry bark is a gorgeous and delicious treat that’s perfect for a special occasion like Valentine’s Day or Mother’s Day. With healthy ingredients, you can feed it to your family or indulge yourself without feeling guilty.
Yield: 8 - 10 servings
Strawberry Bark

Ingredients
- 1 cup fresh strawberries, capped and quartered
- ½ cup almond butter
- ½ cup coconut butter, softened
- 3 tablespoons maple syrup
- 2 rounded Tablespoons mini chocolate chips (I use Enjoy Life brand)
- 1 Tablespoon unsweetened shredded coconut
- 1 Tablespoon freeze dried strawberries, crushed
Instructions
- Place fresh strawberries in a blender or food processor and blend into a smooth puree.
- Add the almond butter, coconut butter, and maple syrup and blend again. The mixture will be pretty thick now.
- Line a cookie sheet with parchment paper and pour the mixture onto it. With a spatula, spread it as thin as possible.
- Top with shredded coconut, crushed freeze dried strawberries, and mini chocolate chips.
- Freeze for 15 - 20 minutes or until firm, then break into pieces. Store leftovers in an airtight container in the fridge or freezer.
Notes
This can be made with frozen strawberries as well. Let thaw and then drain the excess liquid before pureeing.
