Roasted cauliflower makes a nice low-carb side dish. The garlic in this recipe adds flavor while the pine nuts add some crunch. My husband really enjoyed this recipe. If you have the oven turned on to cook your meat, have the cauliflower ready to go as soon as the meat comes out. Since it bakes in 15 minutes, it will be done by the time the meat sits for a bit and gets sliced.
Yield:
Roasted Cauliflower with Pine Nuts

Ingredients
- 1 head cauliflower
- 2 Tablespoons olive oil
- 2 cloves garlic, pressed or minced
- 2 Tablespoons pine nuts
- salt and pepper to taste
Instructions
- Preheat oven to 400° F.
- Wash the cauliflower and pat dry. Cut into bite size pieces.
- Toss all ingredients together in a bowl and then spread on a baking sheet. Bake for 15 minutes, stirring twice. Be sure to stir the pine nuts or they will burn. Check for any that are along the edges of the pan.
Notes
If you can tolerate dairy, trying adding a little grated Parmesan cheese the last few minutes of baking.
Pine nuts are something I never buy, but always enjoy. So I might have to change that given this recipe, although there is still the concern about getting bad pine nuts I guess. I adore cauliflower as a side dish to anything and this sounds perfect in terms of texture! I was meaning to let you know, we made your slow cooker turkey breast for Thanksgiving and it was delicious- We sliced it even thinner the day after for sandwiches- Definitely a year round recipe 🙂
