Pina Colada Smoothie

You don’t have to travel to enjoy tropical flavors. Take this pina colada smoothie outdoors on a nice day, relax, and enjoy the refreshing taste. You just can’t go wrong with pineapple and coconut!

I love making smoothies, especially in the summer, and I love that you can change up the flavors each time. I recently found frozen avocado chunks at BJs and have really enjoyed putting those in my smoothies (not this one though).

Lots of blenders work for making smoothies, but I really love my Blendtec blender. I recently had to call support regarding my twister jar (which I love), and they were easy to get a hold of and super helpful! The Blendtec is a high powered blender which really pulverizes things. The frozen avocado I mentioned is super hard and probably wouldn’t work well in a regular blender unless you let it soften up first.

Pina Colada Smoothie

Yield 2 servings

Ingredients

  • 2 cups frozen or fresh pineapple chunks
  • 2 cups canned coconut milk
  • 2 tablespoons maple syrup (or sweetener of choice)
  • Juice and zest of half a large lime
  • ½ cup unsweetened shredded coconut
  • 2 scoops of vanilla protein powder (optional)
  • ½ cup ice (if using fresh pineapple)

Instructions

  1. In a blender, combine all the ingredients except the ice cubes. Blend on high until smooth.
  2. If using fresh pineapple, add the ice cubes and blend well. (You don’t need the ice if using frozen pineapple.)
  3. Pour into two serving glasses. Garnish with additional coconut, lime, and/or pineapple slices and serve immediately.
