I shared some time ago about about why I don’t menu plan (usually). But I think menu planning can be very helpful at times, and I have also shared menu planning tips.
Since I don’ t menu plan most of the time, I can’t share my menu plans with you each week, but I can share what we had the past week. That’s why I called this Menu Plan Ideas. It’s not my actual plan—it’s what I did. And it might give you ideas.

This past week was a little different than usual. My husband was out of town most of the week, and for various reasons, I needed quick and easy dinners several days. I mostly served salad or veggies and dip with these meals.
Beans and Wieners with Cornbread (Busch’s baked beans, Hebrew National hot dogs)
Chicken Cacciatore – I made a large pot of this so there was enough to take to a friend who had surgery. Since her son is on the specific carbohydrate diet, I made it as more of a soup. I used SCD safe chicken broth and I did not thicken it with corn starch like I usually do.
Tacos – I bought mini chicken tacos made with corn tortillas from BJs. They are gluten free but had cheese in them, so I ate leftovers.
Pizza – Udi’s pizza crust for the gluten-free eaters (I used goat cheese). A frozen regular pizza for the others.

Can you share how you made the chicken cacciatore since I am going to start the SCD soon!
Sunnie, I followed the chicken cacciatore recipe as is except I used Imagine foods chicken broth and did not thicken it with corn starch after it was done. I also omitted the cooking wine because I didn’t know if that was SCD legal or not. I think I added a little extra broth. When it was done cooking, I removed the chicken and shredded it, then added it back in. You can adjust the amounts so you have enough liquid for the amount of chicken.
