My family has been going through some cookie dough adventures lately. It all started because my kids LOVE cookie dough. Currently, our very favorite cookie dough recipe to make is edible gluten free cookie dough. It is creamy and delicious! We decided to change things up a bit and make a chocolate version of this gluten free dessert.
I’m not sure if you have this problem in your house, but in our house, the men in the family LOVE to sneak cookie dough. I once made the mistake of leaving a bowl of gluten free cookie dough on the counter for five minutes. Just five minutes and the bowl was gone! Has that ever happened in your house?
I wish it was a funny experience, but my son ended up getting really sick. That is because the dough had raw egg in it. We had talked about not eating raw egg before … but kids will be kids, and they forget!
This cookie dough is completely safe to eat because it has no eggs in the ingredients. Feel free to make it by the bucketful, or use it to make this incredible ice cream pie. Cookie dough makes an easy pie crust. Once you make the gluten free cookie dough, it is just a matter of making your own homemade no-churn ice cream. Don’t worry. I promise this is really easy 🙂 .
I am sharing my classic vanilla ice cream recipe with you to try. I tend to like no-churn ice cream recipes because of how easy they are to make. My kids love to make their own flavors in our Vitamix. My kids love to add Snickers or other candy bars.
What mix-ins do you like?

- Edible chocolate cookie dough (click for recipe)
- 2 pints heavy whipping cream
- 1 can condensed milk or condensed coconut milk
- 1 teaspoon vanilla
- Favorite mix-ins (chocolate chips, candy bar pieces, fruit, anything!)
- Hot fudge
- Add the whipping cream, condensed milk, and vanilla to a Vitamix or other blender. Mix on high until it forms whipped cream.
- Stir in your mix-ins.
- Take the cookie dough and press into a pie tin. Add the whipped ice cream mixture into the pie tin. Drizzle hot fudge and/or more of the mix-ins on top.
- Freeze for 3 - 4 hours.
