Do you need easy weeknight meals? These gluten-free ground beef recipes are perfect! Ground beef is a great protein source for dinner because it’s easy to cook, it can be used in a variety of recipes, kids usually like it, and when you’re on a tight budget, a little can go a long way.
If you’re looking for quick and easy meals for busy weeknights, cook up a large batch of ground beef (maybe adding chopped onion) on the weekend, divide it, and freeze it in quart size zip top bags that are flattened out. The flat bags make for easy defrosting. Just break up the beef and either defrost and use in a recipe or add it right to the recipe (like a pot of pasta sauce).
Raw ground beef can also be frozen. If you’re making meatloaf, mix up two batches and freeze the second one before cooking. Get it out of the freezer the night before you want to cook it, and then at dinner time, place the meatloaf in a muffin tin. The smaller size means it cooks in about 35 minutes, which is much faster than traditional meatloaf. Or that it and put it in your slow cooker so it’s ready at dinnertime.
