Hi Linda–This week I’m linking up Chipotle Mashed Sweet Potatoes. I’ve been avoiding white/russet potatoes, but this recipe more than makes up for that. Plus, I’ve used the leftovers as the start of all types of goodness, including pasta sauce and smoothies. 🙂
