Happy May! I think May is one of my favorite months. Flowers are blooming, school is almost over, the weather is warm, but usually not hot. It’s spring time at its best. Don’t you agree?

This week I am sharing another cookie recipe- Gumdrop Cookies with Oatmeal and Coconut. My Mom used to make these Gumdrop cookies when I was a kid and I always loved them. I make them with less sugar than she did, so that’s even better! This recipe even kind of qualifies for this month’s theme because it has 1 and 1/2 eggs in it!
