Hi Linda- Happy Wednesday! Thank you so much for featuring my Apple Oat Bran Muffins! Today I shared my recipe for Carrot Cake Muffins. These muffins are incredibly moist because they have 3 cups of grated carrot plus pineapple, raisins and coconut.
