With pumpkins in season and Thanksgiving not far off, you can’t go wrong with trying these gluten-free pumpkin recipes. Pumpkin is versatile and while it’s commonly used in desserts, it can also be used in things like muffins, waffles, and chili.
If you’re planning ahead and thinking about Thanksgiving desserts, the pumpkin pie recipes are approved by gluten-free and gluten eaters alike. Even the dairy free version has been a favorite among my extended family. The pumpkin roll is also a hit, but I’ve not made it dairy free.
Fresh is Best
Canned pumpkin works in all of these recipes, but I think that making your own pumpkin puree from fresh pie pumpkins gives the best flavor. You don’t want to use your Jack-O-Lantern pumpkin unless you are prepared to spend time reducing the amount of liquid. You will get the best flavor and consistency from pie pumpkins.
Other squash, such as butternut squash, can be used in most pumpkin recipes if you want to try something with a slightly different flavor. Just remember that you want the consistency to be about the same as canned pumpkin.

Last year I made a gluten free, dairy free and sugar free pumpkin pie using a gluten free graham cracker pie crust, coconut milk and truvia. It was the best pumpkin pie I ever tasted! On top of that, I made a coconut cream with coconut milk with a little truvia added to it.
