This week’s gluten-free menu plan has hot weather in mind. The recipes rely on the stove top or slow cooker, with the exception of the filet mignon, which could be cooked on a grill (see note below). I threw in the filet mignon for a Father’s Day idea. It’s certainly not a meat that I cook regularly!
I am loving fresh vegetables these days and eat a lot of salads. That’s my go-to meal for lunch or dinner during the summer because I usually have veggies on hand as well as some type of protein that can be added to it. You might not be able to get your young kids to eat it, but a hearty salad makes a great dinner when you’re running late and need food fast.
Main Dish Ideas
- Filet Mignon – Could be cooked on a grill but after the initial browning it would need some indirect heat (put coals to one side or turn off the burner on one side).
