With so much going on this time of year, I love using my slow cooker. This week’s gluten-free menu includes two slow-cooked meals – a whole chicken with some vegetables and meatloaf with potatoes. The leftovers from the chicken get used in a delicious soup.
The calzone recipe is delicious, but it does take a little time. I haven’t tried this recipe with a gluten-free flour mix, but I think something like a pizza crust mix would be worth experimenting with.
The ratatouille is one of my absolute favorite vegetable dishes, and I’m not particularly a fan of eggplant. So don’t let that hold you back. Combined with the other vegetables and herbs, it is so good!
