August is a hot month, so most of this week’s gluten-free menu plan includes recipes that don’t use the oven. Two exceptions are the homemade hamburger buns and the baked meatballs.
Maybe you made some buns when it was cooler and froze them. If not and it’s too hot to bake, you can purchase buns, use bread, or simply use a lettuce wrap. The meatballs which could be cooked on the stove top or you can simply brown some ground beef (my family loves it when I add some bacon to it or use sausage instead).
The recipes in this menu plan are all gluten free. I think all of them are also dairy free (might require a milk substitute). I have provided suggestions for grain free diets for those who are interested.
Weekly Gluten-Free Menu Plan
Hamburgers on homemade buns, corn on the cob, veggies and dip. For grain free use a lettuce wrap in place of a bun and omit the corn.
Chicken and Potato Salad with Zucchini and Onions. The recipe calls for leftover cooked chicken. If you don’t have any, you can cook some chicken or pick up a gluten-free rotisserie chicken to use.
Fried Rice – Use your choice of meat and vegetables. For grain free, use quinoa or make a meat and veggie stir fry.
Slow Cooker Pork Chops with Roasted Brussels Sprouts and mashed potatoes.
Salmon Cakes with Quinoa and Millet Pilaf and asparagus. Omit the pilaf or use only quinoa for grain free.
Spaghetti with Meatballs and salad. For grain free use zucchini noodles.
