I hope you all are enjoying plenty of summer fun and hopefully some relaxation (or at least vacation, which is not always relaxing). My family went to the Smoky mountains in Tennessee and had a great time. We met up with a number of my cousins and their families. That was the highlight for me, but coming in second was going zip lining in the mountains. That’s me in these photos.
Whatever you’re doing, I hope you’re enjoying safe and healthy gluten-free food! Here are some gluten-free menu ideas to help you through the next week.
The recipes in this menu plan are all gluten free. I also provide suggestions for dairy free and grain free diets for those who are interested. I think this week’s menu is all dairy free except for the pizza.
Weekly Gluten-Free Menu Plan
Grilled Kebabs with Broccoli Slaw – Naturally dairy and grain free.
Green Bean Scramble – This is dairy free. You could eat this alone for a grain free meal, or if you want more carb, serve it with rice or gluten-free toast.
Brown Rice Salad with Arugula Salad – Both are dairy free. For grain free, I would make a large arugula salad, adding the meat and almonds called for in the brown rice salad.
Spaghetti with Veggies and Dip – If you have an abundance of garden tomatoes, make your sauce from scratch. If it’s not too hot, make baked meatballs.
Fish Cakes with Homemade Tartar Sauce, Zucchini and Onions, and Quinoa – For grain free, omit the ground hummus chips in the fish cakes and use instant potato flakes or grain free bread crumbs.
Grilled Pizza with Salad – For dairy free, use Daiya cheese substitute or omit the cheese. For grain free, try a zucchini crust pizza.
Breakfast Idea
Potato Latkes – Haven’t tried these with a grain free flour, but I bet it would work.
Dessert Idea
Fruit Pizza is a fun summer dessert that people really enjoy.
For a simple grain-free dessert, try Chocolate Covered Strawberries.
