Well, July is rolling right along. I think summer is a great time for gluten-free eating because there is so much fresh produce available, which is naturally gluten free. If you’re having trouble coming up with meal ideas, though, this gluten-free menu plan can help.
The recipes in this menu plan are all gluten free. I also provide suggestions for dairy free and grain free diets for those who are interested.
Weekly Gluten-Free Menu Plan
Chicken and Broccoli Stir Fry served with Rice – Omit the rice if grain free.
Hamburgers and Grilled Zucchini – Use store bought or homemade gluten-free hamburger buns. If grain free, omit the bun and use a lettuce wrap.
Cheeseburger Rice with Salad – Omit the cheese for dairy free or use a substitute. For grain free, I go with something like a taco salad.
Stew Meat Gravy with Mushrooms (Slow Cooker), Rice, and Green Beans – For grain free, use arrowroot starch and omit the rice. Serve with quinoa if you eat that.
Grilled Salmon with Quinoa and Avocado Spinach Soup –Follow the instructions for the baked salmon, but use the grill as your oven.
Zucchini Pizza – For dairy free, use a cheese substitute or omit the cheese layer. This crust is grain free but uses cheese in the crust. This zucchini pizza crust does not use cheese as part of the crust.
Breakfast Idea
For grain-free, try Zucchini Quiche Muffins.
Dessert Idea
Plum Crumbles – Dairy free but not grain free.
Lemon Poppy Seed Cupcakes – Dairy and grain free.

1cup of peanut butter. 1 egg… 1/4 teaspoon of baking soda.. Mix up and bake @ 375 for 10 minutes.. Options may use choc PB. Yum
