June is here and hot weather along with it. I do less cooking and make more simple meals in the summer, which means I have fewer warm weather recipes to share. So I rounded up a few extra recipes from other bloggers for this month’s menu plan.
Weekly Gluten-Free Menu Plan
Tacos – Be sure to use gluten-free corn taco shells, corn tortillas, or gluten-free flour tortillas. If you can find them, Udi’s flour tortillas are great.
Pineapple Cinnamon Chicken (Slow Cooker), Rice, Grilled Asparagus – The slow cooker is a great way to cook year round. To really keep the heat out of the house, put it outside or in your garage.
Scallop Scampi with Pasta and Steamed Broccoli – This scampi recipe from Eating Well sounds really good, but I haven’t tried it yet.
Porcupine Meatballs and Salad – This kid-friendly meatball recipe is from Shirley at gluten free easily. It beats turning on the oven for pizza.
