I like to use the oven for as long as I can before it gets really hot, then I rarely use it for several months. But May can be a tricky month. Sometimes it gets pretty hot and other times it’s pretty cool. If it’s too warm for you to turn on your oven, then get grilling!
This menu plan is all gluten free, but I also provide options for dairy free and grain free. I eat gluten, dairy, and grain free, but my family does not, so sometimes I cook what they like and eat leftovers or something simple.
Weekly Gluten-Free Menu Plan
Ground Beef Goulash with salad. This is a gluten and dairy free meal but it doesn’t work for grain free. When I make it for the family, I usually keep some of the beef mixture separate or eat leftovers.
Mexican Cornbread Casserole or one of these Cinco de Mayo recipes with veggies and dip.
Chicken and Brown Rice (Slow Cooker) with steamed green beans.
Broccoli Quiche with Hamburger – This is dairy free, though you could add cheese to it. Use potato starch rather than corn starch for grain free.
Tilapia with Tomatoes (or other fish) and asparagus soup. I know it’s difficult to find good tilapia so use whatever light fish you prefer. All naturally dairy and grain free.
Biscuit Crust Pizza with salad. A cheese substitute can be used or omit the cheese for dairy free. Make this zucchini crust for grain free but not dairy free or this zucchini crust for grain and dairy free.
Breakfast Idea
Waffles – This recipe uses a variety of flours. Add some protein and fresh fruit for a big breakfast or have it as breakfast for dinner one night.
Dessert Idea
Chocolate Chip Cookies – You can’t beat them for dessert comfort food, right? Use a butter substitute for dairy free.
