I’m sure many of you have plans for Memorial Day. I’ve included slow cooker sloppy Joes in the menu in case you want something other than grilled food. Or, you could swap it for the grilled kebabs listed later in the week. I hope you all have a great holiday!
Except for the pizza, this week’s gluten-free menu plan is dairy free and can easily be made grain free by omitting the bread or rice.
Weekly Gluten-Free Menu Plan
Salmon Chowder – Perfect for any day that’s not real hot. I absolutely love this salmon chowder. I like to use frozen wild caught Alaskan salmon. Because it comes with the skin on, I bake it first and add it to the soup at the end. Serve with a salad and bread balls.
Sloppy Joes – Serve on your favorite gluten-free buns or make some delicious hamburger buns. Serve with veggies and dip. For grain free, I simply omit the bun and eat the sloppy Joe mix in a bowl.
Chicken & Broccoli Stir Fry – Serve with rice.
Meatloaf and Potatoes (Slow Cooker) – Serve with vegetable of choice.
Grilled Kebabs – Serve with rice or quinoa. Use arrowroot starch if grain free.
Pizza – This can be made dairy free with Daiya cheese substitute, which many people like. Try zucchini pizza crust for grain free.
