Happy spring! March came in like a lion but so far it has not turned into a lamb since we had snow yesterday. Still, I’m happy that temperatures are generally rising and we’ve had a few nice days.
I’m currently working on a furniture makeover in my garage when it’s warm enough for me to keep the garage door open for ventilation. It’s a learning process for me, and the end result won’t be perfect, but I think I’ll be very happy with it.
When I’m working on a special project like that, I find that menu plans are even more helpful. I am able to streamline my shopping and cooking and have dinner on the table at a reasonable time.
The recipes in this menu plan are all gluten free. I also provide suggestions for dairy free and grain free diets for those who are interested.
Dinner Ideas
I would serve salad with most of these meals. A big box of spring mix can last us most of the week.
Potato Chowder (with sausage) – Use a milk substitute for dairy free. For grain free, omit the rice flour (it will be a thinner soup) or try using arrowroot starch.
Mexican Corn Bread Casserole – For dairy free, omit the cheese and use substitutes in the corn bread. For grain free, make chili instead.
Chicken Scampi – For grain free, serve without the pasta or use zucchini noodles
Slow Cooker Beef & Vegetable Soup – For grain free, omit the corn and substitute arrowroot flour for the rice flour.
Spanish Rice with Sausage – For grain free, try substituting quinoa for the rice or make cauliflower rice and serve it with the sausage and onion.
Biscuit Crust Pizza – Use a cheese sub for dairy free. For grain free, make zucchini pizza.
