It’s been another cold week here with more snow. The other night I remembered my Winter Vegetable Soup, and it was a perfect side dish on a cold evening. We had some guests over, and they really enjoyed it, especially one friend who is dairy free. Blending the vegetables together gives the soup a natural creaminess.
So I’ve included it in this week’s menu plan with the bacon wrapped chicken, but it would go well with other meals too. And read below to find out what dessert I’m making for my husband’s birthday.
The recipes in this menu plan are all gluten free. I also provide suggestions for dairy free and grain free diets for those who are interested.
Weekly Gluten-Free Menu Plan
Beef & Bean Casserole – For dairy free, omit cheese or use a substitute and use a milk substitute in the cream soup. For grain free, use arrowroot starch in the soup.
Beef Stew (Slow Cooker) and salad – For grain free, omit the rice flour.
Spaghetti & Meatballs with veggies and dip. For grain free, use zucchini noodles or spaghetti squash.
Lemon Blueberry Trifle – I plan on making this for my husband’s upcoming birthday. It is delicious!
