It’s a busy time of year, isn’t it? It’s amazing how the holiday parties and visits with out of town friends fill up the schedule. I wish it could be more spread out instead of all in one crazy month! With that in mind, this week’s gluten-free menu plan is pretty easy. It doesn’t get much easier than throwing a chicken in the crock pot one night and using the leftovers in soup another night!
The recipes in this menu plan are all gluten free. I also provide suggestions for dairy free and grain free diets for those who are interested.
Weekly Gluten-Free Menu Plan
Crock Pot Chicken and Vegetables with Mashed Potatoes – Just use dairy free milk/butter in the potatoes.
Chicken, Veg & Wild Rice Soup with Bread Sticks – Use leftover chicken from the whole crock pot chicken. Omit the bread sticks for grain free.
Baked Macaroni & Cheese with steamed broccoli – Use Daiya cheese substitute and a butter sub for the macaroni. When I make mac ‘n cheese for my family, I usually eat grain-free leftovers.
Crock Pot Meatloaf and Potatoes with green beans
Spanish Rice with Sausage and salad – Use quinoa for grain free.
Biscuit Crust Pizza with veggies and dip – Use Daiya cheese substitute for dairy free. Make zucchini pizza for grain free.
