My oldest son was married on Sunday. It was a beautiful wedding, and I’m thrilled to now have a daughter! My second son will be getting married in January, and he has moved into his new apartment. That means that now I’m only cooking for three! It’s a big change, and I have to adjust my menu planning.
I hope this gluten-free menu plan helps make your week a little easier. Remember to plan ahead to get the slow cooker meals started early in the day.
The recipes in this menu plan are all gluten free. I also provide suggestions for dairy free and grain free diets for those who are interested.
Weekly Gluten-Free Menu Plan
Chicken Breasts with Garlic Sauce, butternut squash soup, and broccoli – For grain free, use grain free bread crumbs or almond flour and substitute arrowroot starch for corn starch.
Beef & Vegetable Soup (slow cooker), salad, and biscuits – For grain free, use arrowroot starch in place of corn starch and omit the biscuits or make coconut flour biscuits.
Spanish Rice with Sausage, veggies and dip – For grain free, try zucchini and sausage.
Citrus Cinnamon Chicken (slow cooker), rice or quinoa, and green beans almandine
Baked Catfish (or favorite fish), mashed potatoes or cauliflower, and roasted Brussels sprouts
Focaccia Bread Sandwich and salad – For grain free have low-carb meatballs on spaghetti squash.
