I’ll admit that chicken tetrazzini always takes me longer to put together than I think it should, so it might be a good weekend meal for you. There are several easy weeknight meals (including two slow cooker recipes) in this gluten-free menu plan. Use it to supplement your plans and/or rearrange the meals to fit your schedule.
The recipes in this menu plan are all gluten free. I also provide suggestions for dairy free and grain free diets for those who are interested.
Weekly Gluten-Free Menu Plan
Chicken Tetrazzini with Broccoli – For dairy free, omit the Parmesan and use a butter substitute. For grain free, omit the pasta and serve the chicken with broccoli or zucchini noodles and make the sauce with arrowroot starch.
Stew Meat Gravy (slow cooker) with rice and green beans. Use arrowroot starch for grain free and omit the rice.
Pumpkin Chili with salad.
Pineapple Cinnamon Chicken (slow cooker) with quinoa and broccoli.
Ham Loaf with Baked Macaroni & Cheese and green beans. Omit the mac & cheese for grain free, use a cheese substitute for dairy free, or make mashed potatoes.
Spaghetti with Meatballs, veggies and dip – Use zucchini noodles or spaghetti squash for grain free
