I hope everyone is having a good week. I mentioned a few months ago that two of my sons are engaged. The oldest is getting married in three weeks, and I’m attending the bride’s shower today. It’s a busy and exciting time!
I know all of us have busy schedules, and having a gluten-free menu plan can really help relieve stress in your day. Hopefully this menu will assist you in planning meals for your week.
The recipes in this menu plan are all gluten free. I also provide suggestions for dairy free and grain free diets for those who are interested.
Weekly Gluten-Free Menu Plan
Ground Beef Goulash and Green Beans – For grain free have spaghetti using spaghetti squash.
Chicken & Vegetables (Slow Cooker), Mashed Cauliflower, and steamed broccoli.
Easy Chicken Enchiladas with veggies and dip. Omit cheese or use a substitute for dairy free. For grain free, have a taco salad.
Mexican Chili (slow cooker) with Cornbread and salad.
Salmon Cakes, Roasted Brussels Sprouts, and Rice.
Hot Pockets and Salad – Omit cheese for dairy free.

Lemon Poppy Seed Cupcakes (grain free)
