Gluten-Free Menu: November & Last Week

Gluten Free Menu 11-4-12

As I mentioned on Friday, we lost power for a couple of days due to hurricane Sandy.  It actually affected three dinners.  As a result, we ate a lot of salad this week, but we don’t get tired of salad.

I have November’s menu plan ready.  It is free for anyone who subscribes to my blog via RSS or email.   You will find the link near the bottom of each post in the email or feed reader.   It will look like this:

The menu includes dinner main dish ideas for each day.  There are also lists of a few alternate main dishes, side dishes and desserts.  One page contains the menu with links to the recipes, another page has no links for printing.

Now for last week’s menu.

Chicken & Vegetable Soup with Breadsticks – I had leftover chicken that I used in this soup.  The breadsticks were a perfect accompaniment.

Baked Catfish, Potato Salad, Green Salad – I intended to cook the catfish on the grill since I was expecting our power to be out.  At 5:15 we still had power and the winds were just starting to get strong.  I decided I had time to bake it and didn’t want to go outside anyway.  About 5 minutes after I put it in the oven, we lost power.  I had preheated the oven to 400° though, so I left it in there for half an hour and it got done.  Whew!

Roasted Hot Dogs, Potato Salad, Green Salad – The next evening was still rainy and cold.  We had a fire going inside so we cooked the hotdogs over hot coals.

Grilled Steak, Grilled Sweet Potatoes, Salad – Finally the sun came out and I didn’t mind going outside to use the grill.  I put steaks on one side and sliced sweet potatoes in a pan on the other side of the grill.  Yum!

Mexican Chili

Mexican Chili, Salad – The chili was on the monthly menu for the night before, but since we didn’t have electricity, I had to make it the next night.

Spaghetti with Meat Sauce, Salad – I put sausage in the pasta sauce which my family always loves.  You could make meatballs, though.

Breakfast Pie and Broccoli – This quiche like pie is on the menu for later this month.  I made it with only a bottom crust this time.

I also made baked oatmeal this week and used pumpkin in place of the apple butter.
