As I mentioned in my metabolic diet update, I’m not being as strict as I was about grains or potatoes. While I’m not eating them outright, I will use them if they are part of a protein based recipe. There are a few examples in this week’s gluten-free menu.
Salisbury Steak, Tater Tots, Asparagus – I used instant potatoes in the Salisbury steak but did not eat any tater tots.
Chicken Cacciatore, Rice, Broccoli – I did not thicken the cacciatore with corn starch, but ate it more as a soup.
Fish Sticks, Zucchini and Onions – My carb eater had a little leftover rice, but the rest of us were fine with fish and veggies. I made breaded cod fish sticks for the kids and coconut flour breaded catfish for me and my husband. I’ll be sharing that recipe some time soon.
Slow Cooker Beef & Green Beans, Rice – I used rice flour in the beef and beans recipe but did not eat any additional rice.
Zucchini and Sausage – I was short on zucchini so I added steamed cauliflower to the dish. Some of the kids had regular macaroni and cheese.
Almond Meal Pancakes, Turkey Sausage, and Fruit – We used to frequently have breakfast for dinner, but haven’t done that much since gluten-free son and I have been avoiding grains. We both enjoyed this low carb, grain-free version of pancakes. I put a little coconut nectar on mine.
