Gluten Free Menu 7-29-12

I don’t menu plan in a traditional way, but it’s my hope that this menu of what we ate last week will help you in your menu planning efforts.

Outback Steakhouse – Steve (my husband) and I had a date on Sunday.  We saw Black Knight Rises, which we really liked, and we went to dinner at Outback.  I ordered the salmon and vegetables from their gluten-free menu.

Spaghetti and Salad – It was actually macaroni.  A couple of my guys needed to take dinner with them to eat elsewhere.  Mixing pasta sauce and sausage with macaroni was easy to transport and eat.  We almost always have salad with spaghetti.

Slow Cooker Italian Chicken and Potatoes – I’ll be sharing this recipe with you soon.  I served it with steamed broccoli drizzled with a little olive oil and onion and garlic pepper.

Cheeseburger Rice and Salad – I served the cheese separately, but even most of the cheese eaters didn’t use it.

Grilled Steak, Rice/Quinoa Mix, Broccoli – We’re working our way through the grass fed beef that we bought and enjoying it.  This week I grilled a boneless top sirloin steak.  I used the same method as I do for London broil.  (The above picture is London broil.)

Cornbread Pizza, Salad – I hadn’t made this pizza in a while and forgot how good it is.  It makes a thick corn bread crust, but everyone likes it.

I was scheduled to take dessert to my monthly card game.  I made chocolate oatmeal bars which my girlfriends loved.

I also made roasted red pepper hummus this week.

    The card game with girlfriends and chocolate oatmeal bars sound great! Oh, and date nights are always good. 😉
