Except for the chicken Kiev, it was a week of easy meals.
Spaghetti – I didn’t have time to make meatballs, but I did intend to. Instead, the meat was browned in a skillet.
Chicken Kiev – I made an oven baked version that I’ll be sharing with you soon. I served it with small potatoes.
California Pilaf – This is another quick and easy dinner that everyone likes. It’s nothing fancy, but it gets the job done.
Pizza – I doubled this recipe and made one pizza with regular cheese and one with cheddar style goat cheese.
Ham and Eggs – We often eat breakfast type foods on the weekend. This one is well liked and provides lots of protein. I served it with fresh fruit.
