If you are planning a gluten free menu for this week, there are a few ideas.
Last week was busy for us with a big event Friday night for my graduating senior. Gluten-free son and I ate leftovers before heading out, but there was fresh fruit and veggies we could eat.
Chicken & Brown Rice – My husband particularly likes this recipe. Since it uses poultry seasoning, he thinks the rice tastes like stuffing.
Mexican Casserole with Corn Bread – I did a variation of this recipe which I’ll be sharing at Lifetime Moms this week.
Ham and Spinach Frittata – This is a recipe I’m working on for May’s egg theme.
Spaghetti – I really wanted to make meatballs, but didn’t have time.
Pizza – I used a mix which I’ll be sharing with you on Tuesday.
Other stuff – I made chocolate, peanut butter pretzels. They were time consuming, but very good. I also made date balls which my gluten-free son loves and scarfs down.
After my loaf of bunny bread, which didn’t work well for my son’s sandwiches, I made a batch of trusty sandwich buns for his lunches.
