I have mentioned before that one of the reasons why I don’t menu plan is because I plan too many big meals and end up with too much food. That’s what happened this week.
Part of the problem was that I shopped at BJ’s and forgot that a pack of cube steaks is enough for two dinners not one. The other problem is that even although I didn’t have a menu written down before I went shopping, I do a bit of planning in my head as I’m shopping. And in this case I over planned.
That’s the reason we had leftovers, but there was still too much food and some was frozen for another time.
Rotisserie Chicken – Thankfully BJ’s has a couple of options which are labeled gluten free. Shop around a the stores in your area and it’s likely you will find one that has a chicken you can eat. Rotisserie chicken is one of my fast food meals.
Cube Steak – I don’t cook it often, but my husband particularly likes it.
Chicken Cacciatore –You probably know by now this is a favorite of ours.
Baked Salmon – My kids absolutely love salmon cooked this way.
Pizza – It’s a Friday night tradition.
