This gluten-free menu of what we had for dinner last week won’t help you plan Christmas dinner, but perhaps it will give you some ideas for the normal days this week.
Baked Macaroni and Cheese, Salad – This is always a favorite around here. I made a small dairy free dish using Daiya cheese and used regular cheese for the rest.
Roast Chicken, Mashed Potatoes, Broccoli – I bought two smaller chickens and put them both in the oven. The leftover meat is great for lunches.
Ground Beef Ragout – This recipe is from Carrie’s book, The Everything Gluten-Free Slow Cooker cookbook.
Chicken & Vegetable Soup – Leftover chicken is also great for making soup.
Beef Stew, Salad – I made my stew in the pressure cooker this time, but my crock pot recipe is great too.
Hot Dogs, Veggies – Gluten-free son used Kinnikinnick hot dog buns.
