In this week’s gluten-free meal plan, you’ll find easy and tasty recipes, including a couple of my family’s absolute favorites – baked macaroni and cheese and amazing carrot cake.

Main Dish
Salisbury Steak – This is a great way to dress up ground beef. I use homemade cream of mushroom soup, which is quick and easy to make, plus I can make it dairy free.
Slow Cooker Mexican Short Ribs – With only three ingredients, this recipe is so easy to put together! I like using homemade taco seasoning, but any gluten-free brand will work.
Baked Macaroni and Cheese – This is one of my family’s absolute favorite recipes. It can be served as a vegetarian main dish or as a side dish.
Beef & Pepperoni Soup – This flavorful soup is a great way to warm up on a chilly evening.
Slow Cooker Pork Chops – Here is another super easy recipe with only a few ingredients. Enjoy it with some rice and the Brussels sprouts recipe below.
Cheeseburger Rice – This recipe is easy and kid-friendly (but my husband loves it too!). Serve it with a salad or cut veggies and dip.
Side Dishes
Roasted Brussels Sprouts – This is my favorite way to cook Brussels sprouts. I love the really crisp pieces. I recently tossed in some sliced leeks before roasting, and that was delicious.
Paleo Biscuits – My guys enjoy these biscuits and don’t mind at all that they’re grain free.
Breakfast
Pancakes – There’s nothing like delicious homemade pancakes on a lazy morning. They’re also fun as breakfast for dinner.
Onion and Red Pepper Frittata – This makes a delicious, healthy breakfast, and it’s great for other meals too.
Dessert
Carrot Cake – This cake is one of our favorites, if not the favorite. It’s moist and flavorful!
Honeyed Grapefruit with Pecans – This is a healthy winter treat. I don’t usually put sugar on my grapefruit, but I love it with a little honey in this recipe.
