This weeks gluten-free meal plan will help you get a delicious dinner on the table that everyone will enjoy. I love how easy it is to make meatloaf in the slow cooker, the Mexican lasagna is great for company because everyone absolutely loves it, and the salmon cakes are an easy pantry dish, that’s one of my mom’s favorites.
For years, I was the only one in my family who had to eat gluten free (now my husband, oldest son and his wife are gluten free). But I almost always made a gluten-free dinner that everyone ate…and enjoyed! There are plenty of delicious gluten-free dishes or ones that can be adapted to be gluten free. There’s no reason to make two separate meals!
Slow Cooker Taco Meatloaf – This is a flavorful twist on traditional meatloaf, and you don’t have to turn on your oven to cook it.
Green Bean Scramble – This is an easy weeknight meal, and great way to use fresh green beans.
Mexican Lasagna – I often make this to serve to company because it always gets rave reviews. It’s difficult to get a great picture of it, but trust me, people love it.
Slow Cooker Chicken and Brown Rice – The slow cooker is a great way to cook brown rice, since it takes so long. And the chicken cooks along with it. Try brining the chicken first to keep it more moist.
Salmon Cakes – This makes a regular appearance on our menu because my mom loves it. I like to make it the day before I plan to go grocery shopping when I’m out of fresh meat.
Zucchini Pizza – This is a great way to enjoy pizza without all the carbs.
Tomato Avocado Salad – Here’s a great way to use those fresh tomatoes.
Corn Bread – Corn bread is pretty easy to make and everyone always enjoys it.
Baked Oatmeal – With kids back in school, this makes and easy breakfast. You can mix it up the night before and put it in the oven in the morning. Or go ahead and bake it the night before and have it for an easy on-the-go breakfast. It makes a great snack too.
Zucchini Pancakes – These pancakes are low carb and delicious way to use summer squash.
No Bake Cookies – These are traditionally made with peanut butter, but any nut butter will do.
Autumn Fruit Salad – I adore this fruit salad. I have made it for Thanksgiving the past couple of years and my extended family really likes it too.
