You’ll find recipes for easy weeknight meals that everyone will love in this week’s gluten-free meal plan. And for a homemade treat, try the delicious apple crisp or moist and chewy chocolate chip cookies.
The weather is not as hot (though still not cool) but I’m starting to use my oven again for recipes like the enchiladas, easy chicken divan, or paleo biscuits. But the slow cooker is my friend and you’ll always find one or two recipes that use it in my meal plans.
Slow Cooker Italian Pot Roast – The slow cooker is a great way to cook pot roast, and this recipe has an Italian flair to it.
Easy Beef Enchiladas – You could use leftover shredded beef in this recipe in place of the ground beef.
Slow Cooker Chicken and Vegetables – The only thing I don’t love about this recipe is getting the leftover meat off the chicken bones. But it’s totally worth it, and I love using the leftover chicken and broth.
Easy Chicken Divan – This is just one great way to use leftover chicken (see above recipe).
Zucchini and Sausage – This is an easy stove top dish. The sausage gives it lots of flavor.
Cheeseburger Rice – One of my husband’s favorites and my parents love it too. And it’s always a kid pleaser.
Beet Salad – This is REALLY GOOD. Trust me, even people who don’t like beets like this salad with carrots and fruit!
Roasted Brussels Sprouts – This is my favorite way to eat Brussels Sprouts, and I’m so glad that it’s getting cooler so I don’t mind using the oven to roast veggies.
Paleo Biscuits – If you like bread with a meal but not all the carbs, this is a good option.
Sausage Spinach Quiche – This recipe can be made for breakfast or dinner. It can be made with or without a crust. And you can use hamburger or sausage.
Pumpkin Breakfast Bars – This is a good breakfast bar or snack bar.
Apple Crisp – This is an oat free version of a delicious fall dessert.
Chocolate Chip Cookies – These are grain free and turn out moist and chewy.
