I’m sure most of you are settling into your fall routines with kids back in school. While I don’t miss the hectic schedule, I do miss the days when my boys played soccer in the fall and spring. Now I only have one at home, and he’s back to college. But I do still cook for him since he commutes to school. He loves my Chocolate Chip Walnut Snack Bars for taking to school and my husband loves them for a work snack.
This Slow Cooker Taco Meatloaf gives a nice flavor twist to traditional meatloaf, and it’s easy to make. Top it with salsa instead of ketchup.

Southwestern Pasta makes a great hot weather side dish (and it’s still been very hot here!).
Corn Bread is comfort food and goes well with a lot of meals. It’s a nice addition if you have a very simple meal like a taco salad.
Baked Oatmeal is a great make-ahead breakfast for fall. You can combine the ingredients at night and put it in the oven in the morning. Or you can bake it the night before and have it ready to eat. The leftovers are great for snacking too.
