There’s a roundup of easy and delicious meal ideas in this week’s gluten-free meal plan. There are several pumpkin recipes to enjoy along with one of my family’s absolute favorite recipes.
With fall in full swing and Thanksgiving on the way, check out my list of gluten-free pumpkin recipes.
Mexican Beef Bowls – This recipe is easy, delicious, and always a hit. There are plenty of options for everyone. It can be served with or without rice and with or without toppings (sour cream, shredded cheese, green onions).
Turkey Meatballs in White Sauce – My husband and parents really enjoy this recipe. I usually bake the meatballs, but they can be cooked in a skillet. When I’m in a hurry, I skip making meatballs and simply brown the ground turkey mixed with the seasonings.
Baked Macaroni and Cheese – This recipe is one of my family’s all time favorites. With cheese and eggs, it could be a vegetarian main dish, or serve it as a side dish with an easy protein.
Pineapple Cinnamon Chicken – With only four ingredients, this tasty slow cooker dish is super easy to make.
Pumpkin Chili – A can of pumpkin puree makes this chili variation perfect for fall!
Biscuit Crust Pizza – This homemade pizza doesn’t require rise time, and you can easily make individual pizzas, which is always fun.
Apple and Walnut Stuffed Acorn Squash – Apples, walnuts, dates, and cinnamon make this recipe a delicious way to enjoy acorn squash.
Corn Bread – This corn bread is delicious. It is an easy bread that goes well with many meals.
Roasted Brussels Sprouts – This is my favorite way to enjoy Brussels sprouts.
Blueberry Waffles – These waffles are perfect for a weekend breakfast.
Paleo Nut Muffins – Made with almond flour, almond butter, and applesauce, these lower-carb muffins are delicious.
Pumpkin Honey Spice Cookies – Here’s another recipe that is filled with fall flavors!
