There are several pumpkin recipes to enjoy in this week’s gluten-free meal plan along with one of my family’s absolute favorite recipes, and one that’s great for serving to company.
Mexican Beef Bowls – I have served this to company a couple of times recently, and it’s a big hit. The meat turns out nice and tender. Everyone puts together their own bowl (or plate) with or without rice and toppings, which makes it easy to adapt for different diets.
Turkey Meatballs in White Sauce – My husband and parents really enjoy this recipe. I like baking the meatballs but you could do them in a skillet. The sauce is dairy free and a nice change from tomato based sauces.
Baked Macaroni and Cheese – This recipe came from my mom and it’s one of my kids all time favorites. It could be a vegetarian main dish, or serve it as a side dish with an easy protein. Either way, everyone will love it!
Pumpkin Chili – This recipe form Lynn is perfect for fall!
Biscuit Crust Pizza – This homemade pizza version doesn’t require rise time and you can easily make individual pizzas.
Apple and Walnut Stuffed Acorn Squash – What a delicious way to enjoy fall squash.
Corn Bread – This is an easy bread that goes well with many meals.
Roasted Brussels Sprouts – This is my favorite way to enjoy Brussels sprouts.
Blueberry Waffles – These are perfect for a weekend breakfast or try them as breakfast for dinner.
Paleo Nut Muffins – I love the texture of these muffins and that they’re lower carb.
Pumpkin Honey Spice Cookies – Filled with fall flavors!
Paleo Pumpkin Bars – These soft bars lightly sweetened with honey can work as dessert or snack!
