Last weekend my husband and I enjoyed some time away with a group of friends while my parents were with my sister. One night I made a large bowl of salad for the group, and everyone loved it! I used the recipe for Great Salad from my friend Shirley. This week I made it for my parents, and they loved it too.
Slow Cooker Chicken and Vegetables – Try different vegetables or simply leave them out and just cook the chicken this way. You really can’t go wrong, and it’s so easy!
Chicken and Broccoli Chowder – We always love this chowder, which works great with a milk substitute. It’s a great way to use leftover chicken.
California Pilaf – This is great for a busy weeknight.
Slow Cooker Beef Stew – This recipe is always delicious. My parents like how tender the beef is when slow cooked.
Fish Sticks – There are a few steps to this recipe, but it’s so good, and kids will love it.
Calzones – This one takes a little more work, but it’s so good and allows you enjoy a delicious Italian meal.
Zucchini with Walnuts – I’m still getting fresh zucchini from our local farm stand, and I love it this way.
Winter Vegetable Soup – I love this soup blended and smooth, and if you add in some cooked sausage, you can make a meal out of it.
Smoked Sweet Potatoes – If you don’t have a smoker, use your oven (directions in the recipe). It’s still delicious.
Baked Oatmeal – My mom especially loves this recipe, but she’s partial to apple butter.
Apple Coffee Cake – This grain-free recipe is moist and lower carb.
