This week’s gluten-free meal plan includes a variety of tasty recipes to serve your family. From Mexican corn bread casserole to homemade pizza, everyone will love eating gluten free.

I hope everyone had a wonderful Thanksgiving! Ours was small, due to Covid-19. But we enjoyed a variety of dishes and have so much to be thankful for!
Main Dish
Slow Cooker Chicken and Mushroom Soup – This is a delicious low-carb soup that’s easy to make.
Mexican Casserole with Cornbread – This casserole is baked with corn bread on top, which makes it a real winner!
Apricot Glazed Chicken – I love these easy baked chicken thighs!
Slow Cooker Sloppy Joes – This makes a large recipe and is good for feeding extra people or for having enough for a couple of meals. We love it with homemade hamburger buns.
Tilapia with Tomatoes – Use any light fish in this easy recipe.
Homemade Pizza – While it takes a little time, this is an amazing pizza crust recipe that even gluten eaters really enjoy!
Side Dishes
Bacon Wrapped Potato Slices – Here’s a twist on a classic combination of potatoes and bacon.
Cranberry Squash – Cranberries add flavor and color to this butternut squash dish.
Paleo Cornbread – My husband and parents really love this “cornbread” that’s free of corn. It’s a soft and moist bread that’s easy to make.
Breakfast
Blueberry Waffles – These make a delicious breakfast treat, or have them as part of breakfast for dinner or even for dessert!
Paleo Pumpkin Muffins – These moist muffins are lower in carbs and great for breakfast or a snack.
Dessert
Thumbprint Cookies – These holiday cookies are fun to make and one of my favorites.
Gingerbread Men – These grain-free gingerbread cookies are so moist, chewy, and delicious. I just love the texture.
