I hope everyone enjoys the three day weekend. Besides Memorial Day there are a lot of graduation parties this time of year (I had a son graduate from college this week). So I’ve included some recipes in this week’s gluten-free meal plan that would be great for a cookout, such as salads and angel food cupcakes! And although you can easily buy gluten-free buns, my homemade hamburger buns are soft and moist, and you can freeze the extras.
Main Dish
Chicken Parmesan is always a big hit with my family, and it’s great for serving to company too.
Slow Cooker Sloppy Joes – If you don’t have or don’t want to use a grill for Memorial Day, these sloppy Joes are a delicious substitute for burgers. There are decent gluten-free hamburger buns available to buy, but we love this recipe for homemade buns.
Baked Chicken Tenders – These chicken tenders have a grain free coating which keeps them nice and moist while they bake.
Slow Cooker Mexican Beef Stew – It’s so easy to throw everything into the crock pot, and I love the way the beef turns out so tender.
Salmon Cakes – I made these for my mom recently, and she just loves them. And homemade tartar sauce is super easy to mix up.
Biscuit Crust Pizza means there’s no rise time for the crust. The biscuit dough works best in smaller sizes so it’s perfect for individual pizzas.
Sides
Homemade Coleslaw – I honestly can’t get enough of the homemade stuff, and I love taking this to cookouts.
Hamburger Buns – I mentioned these above, but in case you missed it, these buns are soft and moist. And they freeze well too. We use them for burgers or any kind of sandwich.
Beet Salad – I love what one friend said about this: “I don’t usually like beets, but this is good!” I think the other ingredients in the salad help to balance out the beet flavor. And it’s a beautiful salad!
Breakfast
Baked Oatmeal – Now is the time to enjoy this before the weather gets too hot to bake. You can put it together at night or bake it in the morning. It’s also great for snacks.
Almond Matcha Smoothie – I eat smoothies almost daily once the cold weather passes. They’re great for any meal or snack, but this one is great for getting you going in the morning.
Dessert
Angel Food Cupcakes – I adore angel food cake and these cupcakes are easier to make than a big cake. They’re great for a party too.
Chocolate Coconut Candy – This is a delicious no-bake, no-cook recipe and it’s much healthier than most chocolate candy.
