In this week’s gluten-free meal plan, you’ll find delicious meal ideas for chicken, beef, salmon, pizza, and more. There are ideas for warm weather cook outs, breakfast, and dessert.
As of this week, our household is fully vaccinated, and it’s nice to once again visit with people face to face. Getting together outdoors is still a good idea. The homemade coleslaw and beet salad that you’ll find below are delicious side dishes for such occasions. And the homemade hamburger buns are perfect for burgers or sloppy joes.
Chicken Parmesan – This recipe is always a big hit. It’s flavorful, and the coated chicken always turns out moist. I tend to think of this as a more special dinner, but it’s really quite simple. If you’re dairy free, try using a cheese substitute or simply omit the cheese.
Slow Cooker Sloppy Joes – These sloppy Joes are a delicious substitute for burgers (making them a good option for Memorial Day). This recipe makes 10-12 servings, so share it with family and friends, or freeze the extra. It’s delicious served with this recipe for homemade buns.
Baked Chicken Tenders – These chicken tenders have a grain-free coating that keeps them nice and moist while they bake.
Slow Cooker Mexican Beef Stew – Stew meat, tomatoes, onions, black beans, and taco seasoning are combined in this easy recipe. I love using my slow cooker and the way the beef turns out so tender.
Biscuit Crust Pizza – Using a biscuit crust means there’s no rise time. It works best in smaller sizes, so it’s perfect for individual pizzas. Let each person add the toppings they want.
Homemade Coleslaw – Homemade coleslaw is always consumed quickly in our house. I never liked coleslaw until I tried homemade, and it makes a big difference. I love taking this to cookouts.
Hamburger Buns – I mentioned these above, but in case you missed it, these buns are soft and moist. And they freeze well too. We use them for burgers or any kind of sandwich.
Beet Salad – Carrots and apples help to balance out the beet flavor in this salad. People who don’t normally like beets find they enjoy this. Also, they have less of a strong beet flavor when raw.
Baked Oatmeal – This recipe can be put together at night and baked it in the morning. It’s great for breakfast and snacks.
Almond Matcha Smoothie – I eat smoothies almost daily once the cold weather passes. They’re great for any meal or snack, and this one is great for getting you going in the morning.
Angel Food Cupcakes – I adore angel food cake, and these cupcakes are easier to make than a big cake. They’re great for a party too.
Chocolate Coconut Candy – This is a delicious no-bake, no-cook recipe and it’s much healthier than most chocolate candy.
