Salmon Chowder – I love this soup any time of year, and my family always enjoys it too. My preference is to use frozen wild Alaskan salmon. Because it comes with skin on the bottom, I usually bake it first, separate it from the skin, and add it to the soup after the veggies have cooked. But fresh or canned salmon work as well. Taco Rice – This easy, kid-friendly recipe only requires a few simple ingredients. I like making my own taco seasoning and keeping it on hand for recipes such as this. If you use store bought seasoning, be sure to check the ingredients for gluten.
Arugula Salad – You can use fresh cooked beets or canned beets for this salad.
Drop Biscuits – I love these nice, soft biscuits. They’re made with sorghum flour, tapioca starch, and corn starch. They’re simply delightful! If you’re dairy free, use oil instead of butter and a milk substitute.
Pancakes – Pancakes are always a special breakfast treat at our house, and these are delicious. I don’t often make them for breakfast, but we like having breakfast for dinner sometimes.
Zucchini Pancakes – If you want a lower carb pancake, try these, which are made with almond flour, zucchini, eggs, and seasoning. They’re a savory pancake, rather than a sweet one.
