This week’s menu plan is late getting posted because, you know, life is just not normal. I forget what day it is and don’t have normal routines to keep me on track. Plus, I’m distracted by news and information.
How are all of you doing? How are you managing food wise? I have heard from people on Facebook that they are having trouble finding gluten-free products in their stores. I encourage all of you to look for products that are naturally gluten free. And remember to check out ethnic sections of the store which often carry gluten-free products that aren’t necessarily labeled as such.
This week’s gluten-free meal plan includes some easy and delicious dinner ideas. If you have baking supplies and plenty of time on hand, the French bread and pizza crust are definitely worth making.
Chicken Parmesan – The coated chicken stays nice and moist in this recipe. It’s a family favorite.
Taco Soup – While the weather is still cool, this is a delicious soup that’s often a hit with kids.
Ground Beef Goulash – This is an easy stove top meal.
Slow Cooker Chicken & Brown Rice – Put everything in the slow cooker and forget about it for a while. Add some veggies at dinner time, and you have a great meal.
Salmon Chowder – I think this is my absolute favorite soup. I wish I had salmon in my freezer to make it!
Pizza – My family has always loved this homemade gluten-free pizza crust. The recipe makes two thick crusts (rectangular baking sheet and round pizza pan) so you can feed the family and have leftovers. Or you can use the recipe for a single crust. It’s a slightly different recipe, but still really good.
Ratatouille is one of my favorite vegetable dishes, and it makes the kitchen smell great too!
Baked Oatmeal – My parents really enjoy this recipe for breakfast. You can put it together the night before and bake it in the morning. It’s also great for snacks.
Zucchini Quiche Muffins – These are a healthy, low-carb breakfast or snack option.
Peanut Butter Cup “Cheesecake” – Dairy-free and grain-free, this is a delicious dessert without refined sugar.
