This week’s gluten-free meal plan includes some easy and delicious dinner ideas that your family is sure to enjoy. From chicken Parmesan, to taco soup, to homemade pizza, there are plenty of winning recipes.
If you like baking, the French bread is soft on the inside and crusty on the outside. You just can’t beat freshly made bread for comfort food. The pizza crust is definitely worth making, too. I like a thick and chewy crust, which is hard to find. In fact, I’ve never found a gluten-free version as thick or as good as mine.
Chicken Parmesan – The chicken in this recipe is coated with tortilla crumbs, which add flavor and keep the chicken nice and moist. Other coatings can be used as well. Family and friends always enjoy this recipe.
Taco Soup – This is a delicious soup that’s full of taco flavors. You can use ground turkey or beef and add a variety of toppings. Use seasoning to your taste. Just keep in mind that not all packaged taco seasoning is gluten free. I like to make my own.
Ground Beef Goulash – This is an easy stove top meal with Italian flavors. My husband likes it with freshly grated Parmesan cheese on top.
Slow Cooker Chicken & Brown Rice – This recipe lest you put everything in the slow cooker and forget about it for a while. Add some veggies at dinner time, and you have a great meal!
Salmon Chowder – This is one of my favorite soups. I have made it with fresh, frozen, and canned salmon. It’s good no matter how I make it.
Pizza – My family has always loved this homemade gluten-free pizza crust. I used this recipe when I had three growing boys. It makes two thick crusts (rectangular baking sheet and round pizza pan) so you can feed the family and have leftovers. Or you can use the recipe for a single crust. It’s a slightly different recipe, but it’s still really good.
Ratatouille – This is one of my favorite vegetable dishes, and it makes the kitchen smell great too! The flavors only get better with time, so it’s wonderful leftover.
Baked Oatmeal – This recipe can be put together the night before and baked in the morning. It’s great for breakfast and snacks.
Zucchini Quiche Muffins – These are a healthy, low-carb breakfast option.
Peanut Butter Cup “Cheesecake” – Dairy-free and grain-free, this is a delicious dessert without refined sugar.
