This week’s gluten-free meal plan includes easy and delicious weeknight dinner recipes such as hummus crusted chicken, chicken enchiladas, and zucchini crust pizza. You’ll also find breakfast, dessert, and side recipes that will help you prepare delicious meals.
Hummus Crusted Chicken – This recipe requires only three ingredients and is cooked on the stove top for an easy but delicious main dish. The chicken turns our moist and flavorful, so you can’t beat it for an easy weeknight meal.
Chicken goes with so many sides, but I suggest you serve it with a salad, such as the arugula salad listed below, and rice or quinoa.
Unstuffed Cabbage – This recipe includes Instant Pot and stove top directions for a delicious meal. It makes 6 – 8 servings, so if that’s more than you need cut the recipe in half or freeze the extras for an easy meal another time.
This recipe is grain free, but stuffed cabbage often includes rice. If desired, stir in cooked rice after the recipe is done cooking.
Chicken Enchiladas – I like to use leftover cooked chicken for this recipe. Cook extra chicken when you make the hummus crusted chicken above, or pick up a gluten-free rotisserie chicken.
Keep in mind that not all enchilada sauce is gluten free. Be sure to read the ingredients or try making your own enchilada sauce.
Slow Cooker Ground Beef Stew – Ground beef and veggies are combined in this flavorful dish. For a one-dish meal, add potatoes to the pot or stir in cooked rice after the stew is done.
I make this recipe regularly, and although it is nothing fancy, it is always enjoyed. I sometimes vary the vegetables to use that I have. The last time I made it, I omitted the tomatoes but included two sliced radishes, a chopped turnip, a couple of diced gold potatoes, and several stalks of celery, sliced.
Salmon Quiche – This recipe uses canned salmon and is a great pantry meal for days when you are out of fresh meat. It also uses coconut milk and is dairy free. If you are a dairy eater, feel free to stir in some cheese!
Zucchini Crust Pizza – This pizza is delicious and low carb. There’s also a vegan option.
Arugula Salad – You can use canned beets or fresh cooked beets in this arugula salad.
Bread Sticks – A little bread adds a nice touch to any meal, but especially when you are gluten free. These bread sticks are dairy free and perfect to accompany most dinners.
If you make several batches of the dry ingredients (while you have them all out), you’ll save yourself time when you make the breadsticks again.
Applesauce Muffins – These muffins use brown rice and sorghum flours and are flavored with cinnamon and nutmeg. You can try using a gluten-free flour mix, if you don’t have the individual flours. Use 1 3/4 cups in place of the flours and starch.
Breakfast Sausage – If breakfast sausage is too fatty for you, try making your own using lean ground pork.
Lemon Blueberry Trifle – This a delicious dessert that everyone always loves. I made it earlier this month for my husband’s birthday. He always loves it, but it was even better this time when I used frozen huckleberries in place of the blueberries.
Date Balls – Dates are a naturally sweet treat. In this recipe they are combined with nut butter, almond flour, and more for a delicious and easy grain-free dessert or snack.
