I’m sorry I missed posting a menu plan last week. I have been traveling and very busy with family matters due to my dad having surgery. It’s probably going to continue for a while, so if you don’t hear from me as often as usual, that’s why.
This week’s gluten-free meal plan has a few super easy recipes and a couple of my family’s favorites, including amazing carrot cake.
Main Dish
Salisbury Steak is a great way to dress up ground beef. I use homemade cream of mushroom soup which is quick and easy to make, plus I can make it dairy free.
Slow Cooker Mexican Short Ribs are easy to put together with only three ingredients! I like using homemade taco seasoning but any gluten-free brand will work.
Baked Macaroni and Cheese is one of my family’s favorite recipes. It can be served as a vegetarian main dish or as a side dish.
Beef & Pepperoni Soup is flavorful and a great way to enjoy hot soup on a chilly evening.
Slow Cooker Pork Chops – This is another super easy recipe. Enjoy it with some rice and the Brussels sprouts recipe below.
Cheeseburger Rice is easy and fun for kids (but even adults enjoy it). Serve it with a salad or cut veggies and dip.
Sides
Roasted Brussels Sprouts – a delicious way to enjoy this veggie.
Paleo Biscuits – My guys enjoy these biscuits and don’t mind at all that they’re grain free.
Breakfast
Pancakes – There’s nothing like delicious homemade pancakes on a lazy Saturday morning. They’re also fun as breakfast for dinner.
Onion and Red Pepper Frittata make a great healthy breakfast but it’s great for other meals too.
Dessert
Carrot Cake – This is one of our absolute favorite cakes. It’s a must try!
Honeyed Grapefruit with Pecans is a healthy winter treat. I don’t usually put sugar on my grapefruit, but I love with a little honey in this recipe.
