This week’s gluten-free meal plan includes one of my husband’s favorite meals as well as some other family favorites. I hope everyone enjoys time with family this Father’s Day. I know I’ll have a great time hanging out with my kids and granddaughter and celebrating the great dad that my husband is. And I won’t forget to call my own dad!
Main Dish Ideas
Filet Mignon is one of my husband’s favorite cuts of beef, and it’s treat for him on Father’s Day and other special occasions. We like it served with some kind of potatoes and broccoli.
My husband also loves the flavor of this Lemon Dill Chicken (an so do I!). I like that I don’t have to turn on the oven to cook it.
Italian Sausage with Quinoa and Broccoli is an all-in-one dish. Those in my family who are not big fans of quinoa like it this way.
Taco Meatloaf adds Mexican flavors to an otherwise typical meatloaf. This one is baked in a slow cooker, but you could us an oven. I like topping it with additional salsa when eating. You can adjust the level of heat to your likeness with the salsa and taco seasoning that you use. It’s great served with rice and a salad.
Baked Catfish uses a coconut flour coating. If you don’t like catfish, try using a different type of fish in this recipe.
I make Pizza less during the summer, but we can’t live without it altogether. This recipe is a treat for my family – those who are gluten free and not!

I’ve been getting kale in my CSA box, and Kale Chips is one way that I love to use it.
Corn Bread goes great with so many meals. It’s typical to have it with a Mexican meal, but we also like it with eggs and sausage when having breakfast for dinner.
Breakfast Ideas
These No-Bake Almond Breakfast Cookies are grain free and you can add protein powder, chocolate, fruit, and nuts, if desired. Breakfast cookies are great for on-the-go eating.
I just love the texture of these Paleo Nut Muffins which are made with nut butter. You don’t have to be paleo to enjoy them!
Dessert Ideas
Chocolate Chip Cookies are a classic treat and this gluten-free version does not disappoint.
Date Balls are basically no-bake cookies that are easy to whip up using a food processor. They’re also easy to modify adding ingredients that you like.

Those breakfast cookies are just what I need. Something grain free, vegan, and healthy. I’ve been looking for a grab and go for when I’m in a rush in the morning. These healthy cookies would also be good to carry in my purse for a quick snack too. Thanks for sharing them again.
