There is a line up of flavorful recipes in this week’s gluten-free meal plan, including one that my son’s friend simply could not stop eating! And don’t miss the AMAZING carrot cake!
Main Dish
Chicken Scampi – This is a flavorful recipe that I like to make when I have a little more time than usual, so it’s great for the weekend.
Mexican Lasagna – My son had a friend over when I made this recipe recently, and he couldn’t stop eating it and saying how good it was!
Ground Beef and Broccoli with Mushrooms and Ginger – Be sure to pick up fresh ginger for this recipe. It adds a lot to the flavor of the dish.
Slow Cooker Pineapple Cinnamon Chicken – With only a few ingredients, this recipe is super easy.
Fish Tacos – If your family enjoys having tacos regularly, these fish tacos are a great way to mix things up.
Zucchini Crust Pizza – A delicious and low-carb pizza you’re sure to love!
Sides
Roasted Cauliflower – Pine nuts add a nutty flavor and crunch to this roasted cauliflower.
Honeyed Beets – Beets are in season around here. I eat them raw in smoothies and beet salad, but this is a great way to eat them cooked.
Breakfast
Rhubarb Coffee Cake – If you’re a rhubarb fan like me, you’re sure to enjoy this coffee cake.
Healthy Carrot Muffins – These are low-carb and paleo – perfect for breakfast or snacking.
Dessert
Carrot Cake – This is an amazingly delicious cake! Seriously. If you haven’t tried it, you need to!
Chocolate Avocado Pudding – I recently made this with canned coconut milk instead of almond milk. The coconut flavor was barely noticeable and I did have to add additional sweetener. But my son asked me what I did differently and said he liked it better.
