This week’s gluten-free meal plan uses the slow cooker for delicious chicken, beef, and Italian meals. You’ll also find ways to use some summer produce, and a couple of fun chocolaty treats.
Main Dish
Slow Cooker Chicken Cacciatore – A delicious way to enjoy chicken. I especially like to brine the chicken first.
Salisbury Steak – A great way to dress up ground beef, especially if you like mushrooms.
Baked Chicken Tenders – These have a grain free coating and the chicken always turns out nice and moist.
Slow Cooker Mexican Beef Bowls – I love that everyone can make their own bowls with or without rice and toppings of choice.
Zucchini and Sausage – I’ve been getting a lot of zucchini in my CSA box, and this is such a flavorful and easy way to cook it.
Slow Cooker Pizza Casserole – Using the crock pot for this dish saves you from having to turn on the oven.
Sides
Roasted Radishes – I like mild flavored radishes in salads, but when they are stronger, I find that roasting helps to mellow the flavor.
Smoothie – During the summer in particular, smoothies are a great way to eat fruit and veggies. And you might get your family to eat some foods they wouldn’t eat otherwise.
Breakfast
Multi-Grain Waffles – Waffles are so much fun to make and eat. I love this version.
Rhubarb Coffee Cake – I was so happy to get another bunch of rhubarb in my CSA box last week. This is a delicious way to use it, and its low carb!
Dessert
Peanut Butter Pretzels – These are a fun treat. You can use almond butter if peanuts are a problem.
Edible Chocolate Cups – Try putting ice cream, pudding, or other treats in these edible cups.
